Canadian VS English

I will have to work harder on Brit culture when I am there for the holidays.
I was under the impression it's cream first and jam on top of a cream tea.

Ah, the eternal question of the cream tea! It tends to be done differently in different places, although I don't know which preference belongs to where. You have been taught by someone with Dorset roots and in our family we see the clotted cream as the butter subsitute. Elsewhere, they stick the jam on and put more of a decorative dollop of cream on top of the jam. Doing it our way, you get more cream!
